I think my love of soups and stews is well-documented but it truly is a love story for the ages. Soup is probably my favorite thing to cook. You can't mess it up too badly, it usually only requires one pot, it's usually inexpensive, and it's a way to get vegetables in your body that's appealing during the cold months (and doesn't make the kitchen smell like farts--sorry, roast broccoli.) I have decided that in order to get through this winter I'm going to make all the soups in my cookbooks that are relatively practical for lunchtime.
Here are just the ones I've made over the last few weeks.
Skinnytaste's crock pot chicken chili
Everyday Food's classic tomato soup
Chrissy Teigen's chicken pot pie soup
Skinnytaste's roasted pepper and orzo soup
Smitten Kitchen's lentil soup with sausage, chard and garlic
Ina Garten's cream of wild mushroom soup
I can't wait to see what 2018 has in store. (It will probably be more soup.)
